Where is the best place in texas to go for a holiday?

so i want to plan a trip to texas either next winter in the spring time. if we go in the spring time we want to go water rafting and cannoning stuff like that as well as lots of site seeing maybe a zoo or els around those lines. does anyone know where the perfect place in texas would be for any or all of that or would Tennessee be better?? and what are some good hotels or places to stay??
