Buffet at century , sofitel and manila hotel philippines?

how do you approach the chef / service man when dining at those hotel,when asking for lamb , beef , steak ? because encounter some hotel they don't display those pricey stuff on the counter, you have to ask them if you don't , you will never saw those on the counter table. how should i ask them? do not know the exact term for those ?
